For the last 4 years, Baratza has been working on the development and launch of the Sette family of grinders. As we have said many times, the design and build of the Sette grinders is based on many revolutionary and innovative technologies, including the grinding mechanism, the convertible device holder, and the Acaia grind by weight interface. Since the launch of the Sette 270 and 270w in June 2016 we have continued to refine them to alleviate initial issues.
Winning Espresso grinder:
The Sette 270 and Sette 270W with AP (All Purpose) burr have been embraced as winning home espresso grinders offering an incredible combination of: excellent grind profile for delicious espresso; speed, and accurate dosing, directly in a portafilter by time or weight.
The Sette 270 and 270W with the AP burr receives very mixed comments as a Brew Grinder. Some coffee professionals like the grind profile, others not so much. But most agreed that it did not go coarse enough for many of the most frequently used brew methods and recipes. In January, we introduced the BG (Brew Grinder) burr to give a better Brew grind. This interchangeable burr can be replaced by the grinder user, with no tools, in about 30 seconds. Our testing and cupping demonstrated that this burr would create a great cup of coffee. In blind tasting it beat out the Virtuoso and Forté BG many times.
This led us to producing the base model, Sette 30 grinder, and was planned to be marketed as a brew grinder using the BG burr, which we offered to customers in March, to test. The comments were all across the board, from people loving it and having it on their brew bars, to feedback that the grind was not coarse enough and/or had too many fines, and it was difficult to adjust for different brewing methods without a radical change to the brew method. It is still possible to grind for brewed coffee, but not as intuitively as many users would like. We have more work to do – to develop a burr that will create a good brew profile, and be easy and quick to dial-inusing the grinding technology of the Sette.
As you know, we were poised to launch the Sette 30 in mid-June. Given the feedback from testing, we do not think the Sette 30 will meet the high standard and expectations of the Specialty Coffee enthusiast, or of Baratza. We are very sad to announce that we are postponing the launch of the Sette 30 for 2017. We will continue to work with our burr manufacturer to design and test a Burr that performs to the standard of Baratza and our customers. We will share the progress we have made on the burr design on July 26.
