I am seeing slower speeds from my new Sette than previous versions I have worked with, why?
In the case of the Sette line up, we now do a post-machining treatment to our burrs with bead-blasting. This removes any sharp, loose metal shavings and also produces a finish that is more rust resistant. This new finish results in a temporary (but significant!) reduction of grind throughput on the order of 50%. Once seasoned with regular use (about 5-8 lbs, depending on coffee type) the grind speed will be back up to normal Sette throughput (i.e. 3-3.5gr/sec @espresso, 5gr/sec at filter). The motor speed and ring burr rotation speed is unchanged from earlier Sette's, the grind speed is totally a function of the finish on the burrs.
